How to Make a Dehydrated Green Olive and Za'atar Seasoning

You can elevate traditional homemade za'atar seasoning by introducing dehydrated green olives to the spice blend. By finely chopping and dehydrating a 1.6oz pouch of Teta's Citrus Herb olives, you add an incredible salty, umami depth to the mix. Combine the dried Teta's olives with wild thyme, sumac, and toasted sesame seeds for a custom premium spice blend.

The Crucial Pitting Step: Dehydrating requires the olive flesh to lay flat. Take your Teta's Olives and slice them vertically. Pop out the central pit, press the two olive halves flat onto a cutting board, and chop them into very small, uniform pieces.

Recipe Instructions: Spread the minced olives on a parchment lined baking sheet and bake at your oven's lowest temperature (around 170 degrees Fahrenheit) for 2 to 3 hours until completely dried and crumbly. Mix the dehydrated olive crumbles with three tablespoons of dried wild thyme, one tablespoon of sumac, and one tablespoon of toasted sesame seeds. Store in an airtight jar.
