DISH INGREDIENTS

  • 20-25 large cremini or button mushrooms (stems removed)
  • 2 bags of Teta’s Olives Fiery Hot Thai Pepper (pitted and chopped)
  • 1/4 cup cream cheese (softened)
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic (minced)
  • 2 tablespoons breadcrumbs (optional for extra crunch)
  • 1 tablespoon fresh parsley (chopped)
  • Salt and pepper to taste
  • Olive oil for brushing

INSTRUCTIONS

  1. Preheat the oven:
    Preheat your oven to 375°F. Line a baking sheet with parchment paper or lightly grease it with olive oil.

  2. Prep the mushrooms:
    Clean the mushrooms and remove the stems, creating a cavity for the stuffing. Brush each mushroom cap lightly with olive oil and arrange them on the prepared baking sheet.

  3. Make the filling:
    In a mixing bowl, combine the chopped Teta’s Olives Fiery Hot Thai Pepper, softened cream cheese, grated Parmesan, minced garlic, and fresh parsley. Mix well until fully combined. Season with a little salt and pepper, to taste.

  4. Stuff the mushrooms:
    Spoon the olive-cheese filling into each mushroom cap, pressing the filling in gently. If you want some extra texture, sprinkle breadcrumbs on top of each mushroom.

  5. Bake:
    Bake the stuffed mushrooms for 15-20 minutes, or until the mushrooms are tender and the tops are golden brown.

  6. Serve and enjoy:
    Once out of the oven, let the mushrooms cool slightly before serving. Garnish with a little extra parsley if desired, and enjoy these spicy, cheesy bites!
