DISH INGREDIENTS

  • 12 oz of your favorite pasta (penne or spaghetti work great)
  • 1 jar of Teta’s Olives Citrus Herb Infusion (pitted and halved)
  • 2 tablespoons extra virgin olive oil
  • 4 cloves of garlic (thinly sliced)
  • 1 cup cherry tomatoes (halved)
  • 1 small red onion (sliced thin)
  • 1 cup baby spinach (optional, but we love it)
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional, for a little heat)
  • Zest of 1 lemon
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

INSTRUCTIONS

  1. Cook the pasta:
    Bring a pot of salted water to a boil, toss in your pasta, and cook until al dente (you know the drill). Don’t forget to save about ½ cup of that pasta water—it’s liquid gold for the sauce! Drain the pasta and set aside.

  2. Sauté the garlic and onions:
    Heat olive oil in a large skillet over medium heat. Add the sliced garlic and red onion, cooking until fragrant and the onions soften—about 3-4 minutes. The smell alone is going to make you hungry!

  3. Add tomatoes and olives:
